In the Kitchen with Kate: Healthy Wendy’s Copycat Frosty

  
Really? That seems deceptively simple. But I had all of the ingredients on hand… And I had just finished 30 minutes on the stationary bike… So yes please!! 

  
I gathered my ingredients. 

And I blended. 

And blended. 

And shook the cup and blended some more. 

The mixture was really thick so I added another 1/4 cup+ of Almond milk. 

(The “+” is because I had just over a 1/4 cup left and went a head and finished off the carton! 😂😂😂) 

I blended some more. 

Taste test time! 

Ok, still really think and oh my goodness was that a chocolate overload! 

And not in a good way! 

And I’m out of almond milk, so I add some water. And then a scoop of vanilla protein powder. My thinking was that the vanilla would help off-set the bitter chocolate (cause 1/3 a banana wasn’t near enough sweetener!!) and to help keep the shake thicker after I added water… 

  
It worked!! So while the recipe wasn’t all that spot-on for me, with a few modifications I made it work! By the time I modified it, the caloric count was 234, which isn’t bad considering I had a scoop of protein in there! It was simple enough I’ll be making this me again! 

Oh, and well, I wouldn’t ever mistake it for a Wendy’s Frosty, it was really tasty, and 160 calories less (it would have been 260 calories less, but again, protein powder!!)

Guys, nothing funny is happening in my life.

I’m not having many “Did That Just Happen” moments right now.

And, (with a worried sigh), I’m afraid I might not have many more.

You see, Mr. T has picked a college.

It is all becoming very real that the little boy I JUST HAD is growing up.

I made him stop and take a picture with me at a college visit the other day.

“Mom, we don’t need to now, there will be time later.”

“Get your butt over here and take a picture with me! Don’t make me go all mom on you!”

And you know what – there wasn’t time later!

Time is not linear for me, when I say it happened the other day, I could mean yesterday, or 6 months ago.  I don’t waste space in my brain for things like “time”; however, there is a pressure in my chest that tells me – either I’m having a heart attack – or that time is currently paying very close attention to me!

Here is the super-duper good news, though.  My son is bound and determined to expedite his college time and leave with the least amount of debt as possible.  He has saved up to take classes at the community college during the summer, and he is filling out every scholarship form there is… and… he is applying for the housing waiver.  He will live close enough to the school he wants to attend that he can commute.

He won’t be moving into the dorm (fingers crossed) in the Spring.  He’ll be staying at home.  And, while he is never here now, and will probably be here less in the future, it still gives me some peace that I’ll have a little bit longer to yell at him to not leave dirty dishes in the sink or to pick up his shoes from the living room floor because I tripped over them and almost broke my neck!

I look forward to that.

OH! But wait!  The other day I bought a new washing machine!  And Mr. T had exactly 1 hour in between Job #1 and Job #2, so he met me at Lowe’s to load up the machine (it wouldn’t fit in my car) and drive it home – and he unloaded it and set it in place for me before taking off to head back into town for work.

(and if you follow me on Pinterest, you’ll find the inspiration for that recipe, which of course, I modified.  Almond milk instead of regular, greek yogurt instead of sour cream and truvia instead of sugar… and they still turned out divine!)

Oh! One last thing – one of my SMART goals is to hit 50 miles per month with my running.  February miles

Not only did I meet my goal, I increased my mileage from January, so #DoubleWin.  This month also included a longer run, added in an extra half mile towards the end of the month – and it was scary but it went really well!  I think I’ll work in a few more long runs now and work on increasing my stamina.  It’s been feeling good, and I haven’t always been able to say that about running!

Maybe I have a few more moments left in me yet!

I try and ride my stationary bike 5 days a week.  I mix it up with intervals and steady work.  It is great cross-training and keeps me from stiffening up on run days.

It is also time I get to dedicate to social media! I don’t feel like I’m “wasting time on-line” when I am stuck on the bike for 30 minutes anyway!

And my favorite social media is Pinterest – and as y’all know – it doesn’t go to waste, you see me trying things all the time!

So, Pinterest helps me learn new skills, tips and tricks; it keeps me occupied when exercising and it also helps sharpen my snarkiness!

Despite my snarky, I did link to each and every web site that I pulled that pin from, because just because I won’t click through doesn’t mean it’s not a tip you can use! I had fun and giggled over all of these as I was picking them out… I’ve actually been collecting them for months now, waiting until I had amassed a large enough collection of sass to share with y’all!

We took Senior Pictures.  I am blessed that one of my dear friends is a photographer and she has known Mr. T since he was little, so I knew I could trust her to capture his essence, and she did a great job.  Plus, she let me get in a few of them, and be still my heart.  I’m about to go pick this picture up, I had it blown up and put on a canvas!

After work the other day I ran into town and Flocked a teacher.  🙂  It’s a fundraiser we are doing for Senior Celebration, and seriously, when I waved at one of their neighbors as I was surreptitiously putting up almost a dozen flamingos, I was sure I was busted! But the flock of flamingos is up, and the teacher has been a good sport, and even tweeted it!  Our goal is to raise awareness and now raise some funds!

I can’t show you a picture of the mum Mr. T designed for his girlfriend, as he doesn’t give it to her until tomorrow, but the above sneak peak should tide you over!  And, for those not familiar with Friday Night Lights, I wrote a post last year to help you understand how big of a deal Homecoming is for us! (Oh, just FYI, apparently the kids at T’s school were discussing mums and googled it and my post came up, and well, wouldn’t you know, one of the girls IN THE POST was the one googling and saw herself featured.  Hey, I asked for the picture before I took it!! But it still cracked me up!)

I’ll deny this if you ever repeat it, but I am going to miss being a Cheer Mom.  I did great at it! I stepped outside my comfort zone.  I volunteered for stuff.  I talked to people.  Like, seriously, I voluntarily spoke with strangers.  And, some of those strangers have become my friends.  While I have not cheered in the crowd with poms for more than 2 seconds, I have worn bling.

Bling people.

I’m just saying.

And then some sad news.

My beloved Grandpa, who was so fond of having adventures with me, passed away Tuesday the 6th.  He went peacefully and I know in my heart he was ready and he is in a much better place, and Heaven was happy (and lucky!!) to receive him.  He served God, his Country and his Family with grace and humor and love and I am a better person for having had him in my life.

And that is my recap of the last couple of weeks!  #Unprocessed October is still happening, and I’m amazed at how well I am doing… I did discover that Diet Coke and Cheetos are still my go-to stress snacks, and yeah, there were a few days that that happened! But all in all, it’s been a good way to kick off the Last 100 Days of the Year!

Now to finish preparing for Homecoming – but what have y’all been up to?

And it’s pumpkin time!  I love pumpkin time!

I have reevaluated my life, my balance and I have redefined my goals for the Last 100 Days, and if you like that kinda thing, you need to be following OrtsofSorts with me! You know how I love a good challenge, and well, I’m LOVING this one!

You know what else I’m doing? #Unprocessed October! Yes, you heard that right.  I am in a challenge to only eat unprocessed foods. During the month of October.  The best month of the year.  Halloween Candy.  Pumpkin Spice Lattes.

And I can’t eat any of it.

I survived Day 1, as part of my Living in the Now, I’m taking that as a win; however, I did keep a food diary to share with you to help keep me on track.

Day 1:

Breakfast: Coffee is unprocessed.  I should probably read the instructions for this, but I’m sure coffee is unprocessed.  I’m brewing a cup.

Coffee is NOT the same without my Pumpkin Spice Creamer.  Or my Peppermint Mocha Creamer.  Unsweeted almond milk is not the same.  I bet that is processed.  Probably should have read the ingredient list.

I may not survive until the end of the month.

I have four homemade Lara bars left.  All hope is not lost.

Why are there left over fried pickles still here? I told Mr. T they were here, and he knows the reps send the left overs home for him.  Why would today be the day he doesn’t eat them?!?  Technically I could make those at home… so that doesn’t count, right? Crap.  I’m sure it counts.

I want extra points for walking away.

There should be a point system for this.

I should read the instructions; there might be a point system.

Morning Snack:

Maybe I could live on smoothies.  Fruit, spinach, technically you can make yogurt at home – I have a friend that did it, and I know all of the ingredients – flax seed… it says “seed”, that counts.  Almond milk.  Man, I have got to read that ingredient list!!!

Read through the instructions.  There is not a point system.

Lunch:

This looks like a normal meal for me, I can do this.  Massive salad time.  Romaine, carrots, zucchini, almond slivers, capers.

Note to self:  Research how to make salad dressing.  Like now.

 

Afternoon snack:

I am seriously hungry.  Pear.  Grapes.  Homemade Lara bar.

I have to go run an errand.  I drive right by fast food row.

How processed can a Taco Bell burrito really be? It’s vegetarian.  There has to be points for that.

Maybe we need a sliding scale…

Dinner:

Maybe I should make my own points scale, I drove right past Taco Bell.  And I drove past every other restaurant along the way.

In the Kitchen with Kate: Homemade Donuts

So, I know there are 1,000 ways to spell donuts.  I am lazy efficient, so I go for the shortest, yet still socially acceptable, version there is!

Now that we have that out of the way let’s continue.

A few days ago I told you that I bought a bundt pan.  What I didn’t tell you was that just hours after making that purchase in the store, I was on-line and accidentally bought a donut pan.

It arrived today! Let the confetti and streamers fly!

I have patience the size of a gnat, so naturally I hit up Pinterest and searched for a homemade donut, baked not fried, from scratch and E A S Y.

I found a recipe that, after a quick pantry check, I could make.

Thanks to Moms Need to Know, I was off and running!

I mixed the ingredients and put them in a zippered bag, cut off the tip and that made getting the dough into the pan so much easier.

Popped it in the oven and 8 minutes later, those suckers were ready!

Now, the blogger I used for inspiration had a glaze and a chocolate and, well,

But, have you seen this? I think if you look up “awesome sauce” this is what you’ll find. It’s not too sweet and was a perfect compliment to the donuts.

So, one minute and 30 seconds later, the chocolate was melted!  I took the donuts that were cool enough to touch and dipped them in the chocolate (and FYI, that container is the perfect size to dip the tops of the donuts, I didn’t even have to dirty up a bowl!)
