In The Kitchen with Kate: Healthy Banana Ice Cream

Happy Hump Day! Or whatever day it is when you are reading this!

It’s been a rough week. Like way rough. I was talking to my dad and telling him about it and he goes “you’ve had to pull out the $10 words this week!”

I’ve said things like

“if I had known then I could have allocated resources differently”

and

“returning your call to discuss the viability of the suggested value engineering”.

Oh, and the ever popular

“I think we need to work on our communication skills”

In fact, I was talking to my dad because Mr. T surprised me by letting me know yesterday that he was going to stay at Grammy and Papa’s the rest of the week to house sit.

I wasn’t aware both of my parents were going to be out of town! They thought Mr. T told me and Mr. T thought they told me.

In the meantime I was just sitting over here in the dark!

All alone.

Alone in the dark.

Well, not the dark, I do have the lamp turned on!

But you get the point!

So, what’s a mom to do when she discovers that she has a night all to herself?

She decides it’s time to make healthy frozen chocolate banana ice cream!

Here you go:

Get out your food processor.

2 frozen bananas.

Now, you can also add in flavors. Like a scoop of peanut butter. Or some cocoa powder for chocolate!ย 

ย 

Put bananas in the food processor and hit start.

That’s pretty much it! I happen to almost always have frozen bananas on hand because apparently it is beyond our ability to eat the last banana! So I always just pop it in a baggie and put it in the freezer… And it paid off tonight!

Blend until smooth and then add in your flavoring!

Scoop out and enjoy ๐Ÿ™‚

It’s approximately 200 calories for that bowlful, ย and ย it is so yummy!

I have never considered myself to be artistically talented. As a child during grade school art classes I was somewhere in the middle of the pack as far as ability. I wanted to be one of those kids who could free hand horses, or shade a vase, or paint a beautiful flower and have it look like the flower. Alas, that was not me.

About a month ago I got this intense desire to paint or create artwork. I shared this strong desire with my husband and my mother. They both gave me the same kind of look, which said: โ€œYou donโ€™t do that.โ€ Last Friday night I went to a local โ€œart walkโ€. There were some amazing paintings and other pieces of artwork. It made my desire even stronger. I wasnโ€™t 100% sure where to begin or exactly what I wanted to do. I just knew that I wantedโ€ฆ

I Heart Art

Way back in January, Holley at Chasing Destino and I thought it would be fun to do a long distance art project – and from this one project, so many other ideas were born… but let me stay on task!

Let’s be Pin-Pen-Pals introduced us to the inspiration. ย Pinterest is a wonderful, magical place and we found this puzzle:

It didn’t take long before each number was assigned to a blogger. ย We emailed out the puzzle and you mailed your art work back!

I’m just so excited! ย So, without further ado….

Our Pin Pals Completed puzzle!! ย I love how all of the different pieces came together and made a beautiful piece, even though it all is so different! ย And a special thanks to Holley for compiling the pieces and taking the picture for us!

There were a few people that didn’t get their pieces in, and one of Holley’s kids came to the rescue, so I think that makes it just as special! And, I’m not going to lie, before I matched up the numbers to the people, I tried to guess which piece you had completed… and boy was I wrong!! And I had fun being wrong! ย So, everyone needs to look at the puzzle, the art work that came from all over – Cornwall, Canada and California, and then a few places that don’t start with a “C”, and then go check out all of the bloggers that participated!
