Lunch

I’m a good cook.  Not spectacular and not a chef, but I’m pretty good at trying out new recipes and keeping up with our old favorites.  Normally I try and cook 3 portions for dinner, a portion each for my son and I, and then a portion for me for lunch the next day.  This does not always happen.  It did not happen last night…

I did make a new recipe last night, and it was good!  I wish I knew who to credit for it, but it is just a picture on Pinterest with the ingredients typed in the description. 

4-6 raw chicken breasts (I used 4 tenderloins), new potatoes, green beans (I used fresh, any veggie would work). Arrange in 9×13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!

It was as easy as predicted, the Italian dressing mix added lots of flavor, and the stick of butter kept everything moist.  There were no left overs.  We enjoyed it.

I left the house early for an 8:30 am meeting, and then proceeded to do a little Christmas shopping.  Got home, delved right into work.  Surfaced about 1:00 pm and realized that all I had had was a Grande Pumpkin Spice latte and half of a diet Coke.  I went to raid the kitchen.  I hosted a party a few weeks ago (Halloween) and had a bag of left over crackers.  I grabbed that, and a few slices of cheese… and the left over icing (again, from the party).  After I finished the crackers and cheese, I dipped crackers into the icing. I say dipped, there was only about 2 teaspoons of icing left, and all at the bottom, so I had my hand shoved into the little container trying to dig out all the icing I could.

Yeah, that just happened.  I had icing on my crackers for lunch.  🙂
